Sponge Cake (Banh Bong Lan)

Ingredients:
1 Orange
5-6 Brown eggs
3/4 cup Sugar
1 cup Cake Flour (Sifted)
Pinch of Vanilla
Pinch of Salt
3 tsp water

Step 1:
Beat the eggs and sugar until it becomes fluffy and has a light yellow color. In a small bowl squeeze 1 orange and mix in a pinch of salt, vanilla and 3 tsp of water (if you have a big orange you don’t have to add in water). When you see the eggs has a light yellow color add in the orange juice that you mixed earlier. Continue to mix the eggs after adding the orange juice then add in the cake flour. Mix for another 30 minutes.

Step 2:
Grease a 10 inch pan and pour in your batter.

Step 3:
Bake at 375 degrees for 25 minutes or until golden. Check with a toothpick to make sure it is done. (Or you can bake it at 375 degrees for the first 10 minutes and then 350 degrees for 15 minutes).

  14. Is it really 30mins +30mins beating? So I would make 1 hour just for beating. I have never seen any recipe that need this much beating. Could you pls confirm the beating time pls?

  16. What's a pinch of vanilla? I used 1/2 tea and wasn't sure if it was correct. Also, it would be helpful if you can measure the orange juice. I didn't know if my orange was a large or not.

  19. I just made this. The texture is wonderful, very fine. The centre was quite sticky though. The flavour is really lacking, and I've never seen a recipe for a cake that did not include any type of fat excluding the egg yolks (except for angel food cake, of course). Next time, I will try adding some melted butter in for more flavour, and maybe replace the orange juice for milk or something else.
    Note for others who want to try this recipe: I juiced one regular-sized orange, and it was 1/4 cup of juice (with pulp removed). When I added in the 3 tsps of water & a couple drops of vanilla, it brought the liquid up to 1/3 cup. And please do not beat the batter for 30 minutes after you add in the flour. That has to be a typo in the description. You will overbeat it, and ruin the cake! Just beat it on medium speed until the flour is fully incorporated. It should not take longer than 2-3 minutes.

  20. About 1/2 cup of orange juice is a good amount. After adding the flour it does sink, that's normal. Beat it until it blends together evenly. Using medium to high speed is better. I don't know why it was hard and did not rise. Next time try adding the salt with the eggs before mixing other ingredients in with the eggs. Also, maybe to help it from getting hard. Bake it at a lower temp. and long. Use a toothpick to check if it is ready. Hope your next cake will be a success. =)

  22. i did yesterday but the cake not rise and a bit hard 🙁 how much quantity need for the orange juice? 1 cup or or 1/2 cup? 1st i beat the eggs and everything looks good, after i add the flour the batter sink not fluffy! do i have to use low speed to beat when add in the flour? please advise.   23. I have not use all purpose flour for this recipe before. It is best that you use cake flour. This recipe does not need baking powder or baking soda, you have to really beat the eggs for it to rise. Hope that was helpful.

  26. Hey, Boriville. This cake is scrumptious. Your instructions tell us to mix for 30 minutes…that's a LONG time to mix anything. I think you mean 30 seconds, right? Also, maybe next time your mom makes this, it would be helpful if she pours the orange juice and/or water together into standard measuring cups so we can get an idea exactly how much liquid was used? It looks like about maybe 1/4 cup orange juice plus 3 tbsp of water…so about 1/3 to 1/2 cup liquid total, right? Thanks!

  27. If the orange is big and has a lot of juice, maybe using half of it. My mom had to add in more water to the batter cause our orange didn't have that much juice when we made this video.

  28. Omg, you batter in this video looked very flowy altogether, I did the same portion that you did and its too watery for me! So I added just a bit of flour and it turns out horrible!
