Sponge Cake (Banh Bong Lan)
5-6 Brown eggs
3/4 cup Sugar
1 cup Cake Flour (Sifted)
Pinch of Vanilla
Pinch of Salt
3 tsp water
Beat the eggs and sugar until it becomes fluffy and has a light yellow color. In a small bowl squeeze 1 orange and mix in a pinch of salt, vanilla and 3 tsp of water (if you have a big orange you don’t have to add in water). When you see the eggs has a light yellow color add in the orange juice that you mixed earlier. Continue to mix the eggs after adding the orange juice then add in the cake flour. Mix for another 30 minutes.
Grease a 10 inch pan and pour in your batter.
Bake at 375 degrees for 25 minutes or until golden. Check with a toothpick to make sure it is done. (Or you can bake it at 375 degrees for the first 10 minutes and then 350 degrees for 15 minutes).
