In this video, I’m sharing with you my experience on how to make savoury glutinous rice balls, a very popular street food in Vietnam. The video is in HD and press CC to activate English subtitles.

INGREDIENTS

A. Glutinous rice dough

250 gram glutinous/ sticky rice flour
35 gram rice flour
30 gram caster sugar
5 gram muối
50 gram mashed potatoes or sweet potatoes, or potato starch
200 – 240 ml lukewarm water
300 – 400 ml oil for frying the rice balls

B. Filling

175 gram minced pork
50 gram carrot
18 – 20 gram glass noodles
3 dried wood-ears mushrooms/ black fungus (8 – 10 gram)
20 gram onion
5 ml oil
1/2 tsp salt

C. Salad

300 gram green papaya, koralbi, carrot
20 gram caster sugar
10 ml/ 2 tsp lemon juice
½ tsp salt

D. Dipping sauce

25 gram caster sugar
15 – 18 ml lemon juice
175 ml water
15 – 20 ml fish sauce
minced garlic, pepper, minced chilli – optional
